Cheese was created 4,000 years ago and has been going strong ever since. Cheese is a dairy derived from milk and produced in wide ranges of flavours, textures and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, usually the milk of cows, buffalo, goats or sheep. During production, the milk is usually acidified and the enzymes of rennet are added to cause the milk proteins to coagulate. The solids are separated from the liquid and pressed into final form.Some cheeses have aromatic moulds on the rind, the outer layer, or throughout. Most cheeses melt at cooking temperature.
Did you know? There was a Cheese and Dreams study conducted by the British Cheese Board in 2005, and the outcome was that eating a bit of cheese before bed may actually aid a good night sleep. It also showed that different types of cheese can produce different theme of dreams. Those in the study who ate Stilton cheese before bed reported to have super crazy, vivid dreams. Those who ate Red Leicester reported calm dreams, often revolving around their childhood.
